This matcha Swiss roll cake is a delightful treat featuring a light, airy sponge with a subtle earthy bitterness, paired with whipped mascarpone cream and fresh strawberries.
For me, one-bowl cakes and Swiss rolls are go-to desserts—they’re simple to make and don’t require elaborate decoration. For the holidays, I created this matcha Swiss roll cake with a festive flair: green sponge, red strawberries, and white mascarpone cream. We enjoy it year-round with various fillings, including red beans, strawberries, or raspberries when in season. In this version, I left strawberries out of the filling so the cake stays fresher longer. The gentle bitterness of the matcha balances beautifully with the lightly sweetened cream and strawberries. We hope you find it as enjoyable as we do—happy holidays!

Ingredient Tips

Matcha: Use a high-quality culinary-grade matcha. Look for a bright green color. Two of my favorites are Fukujuen and Ippodo Tea.
Cream of Tartar: This acid stabilizes egg whites, helping them hold air and form a firm, fluffy meringue that won’t collapse.
Flour: You can use cake flour for the softest, most delicate crumbs. It’s slightly more delicate and may crack if handled roughly. All-purpose flour gives a sturdier cake less prone to cracking but slightly less tender.

Cake-Making Tips

Sift dry ingredients: This ensures the matcha and flour are evenly incorporated and prevents lumps.
Fold gently: Incorporate the meringue in three batches using one-direction folding. Overmixing can deflate the batter.
Watch baking time: Overbaking increases the risk of cracks. The cake is ready when lightly golden and springs back with a gentle touch, typically 10–12 minutes depending on your oven.
Roll while warm: Use parchment paper or a clean kitchen towel. Once cooled, carefully unroll, spread the filling evenly leaving a ½-inch border, and roll back up. Parchment paper is convenient since you can discard it after use.

Decorating

To pipe the mascarpone frosting, I used a large rose petal tip (Ateco 128), but you can use any tip or simply spread the cream and create swoops with a spatula. After frosting, chill the cake for 1 hour to firm it up. Finish with fresh strawberries or raspberries for a festive look.

Make-Ahead and Storage

The mascarpone cream can be prepared 24 hours in advance.
The Swiss roll tastes best within 2 days of baking.
Store leftovers in an airtight container in the refrigerator for up to 5 days.

Elegant Woven Textiles are Returning to Modern Interior Decoration

Elegant Woven Textiles are Returning to Modern Interior Decoration

Large fabric wall hangings are experiencing a major revival in contemporary home decoration. These woven pieces offer an abundance of history, rich color depth, and physical texture, making a room feel significantly warmer and more intimate than standard glass-framed artwork. Homeowners are turning to these fabric decorations to create spaces that feel carefully curated and welcoming. When integrated thoughtfully, these textiles act as stunning statement art, introducing dimension and character that flat interior paint or modern paper prints simply cannot replicate. However, successfully decorating with large fabric panels requires a strategic approach to prevent the space from looking old-fashioned.

Submersible Robotics: Prying into the Enigmas of the Deep Sea

Modern ocean exploration relies on staggering engineering feats. Deep-sea vehicles like the remotely operated vehicles (ROVs) Deep Discoverer and Seirios, along with autonomous platforms like Nereid Under Ice, are marvels of technology. These machines are composed of thousands of pounds of hardware and miles of internal wiring. They are built to endure depths exceeding four miles, where the environment is hostile and the pressure is nearly 600 times greater than at the surface.

The Best Selling Vehicles Dominating British Roads Right Now

The Best Selling Vehicles Dominating British Roads Right Now

Fully electric vehicles secured an unprecedented thirty percent of the automotive market in the United Kingdom during the month of June, representing the highest performance observed throughout the current year. This surge helped propel overall vehicle registrations upward by eleven point four percent to hit a grand total of 213,166 units, according to recent data published by the Society of Motor Manufacturers and Traders. This exceptional performance marked the strongest showing for the month of June since the year 2019, with the expansion driven entirely by low-emission options as automakers continue to roll out more electric and hybrid models while fresh automotive brands enter the British marketplace. Consumer appetite for electric mobility was further accelerated by climbing fuel prices connected to ongoing geopolitical tensions in the Middle East.

The Evolution of Sushi: A Surprising Historical Journey

The Evolution of Sushi: A Surprising Historical Journey

The global phenomenon of sushi—the combination of vinegared rice and fresh seafood—has a history that contradicts many modern assumptions. While today it is often viewed as a high-end Japanese delicacy, its roots trace back to ancient China, where it functioned as a preservation method rather than a fresh meal. Throughout the centuries, sushi has undergone radical transformations, evolving from a pungent, fermented street food into the diverse culinary art form enjoyed across the world today.
