Classic Cream Puffs with Chocolate Sauce
Growing up, my mom only made this dessert once, but it stayed with me for years. I can still remember the soft texture, the gentle egg flavor in a pleasant way, and the perfect harmony between sweetness and different layers of texture. Ever since then, I feel like I’ve been trying to recreate that exact cream puff experience.

Even after tasting excellent versions in Paris, none of them quite matched the one my mom made at home. Cream puffs are created using choux pastry, the same base used for éclairs and savory gougères. The word choux comes from the French term for cabbage, referring to the round, puffed shape of the pastry once baked.
If you don’t have vanilla bean paste, you can replace it with vanilla extract at a ratio of about three teaspoons.
Ingredients Overview
Pastry cream base includes granulated sugar, cornstarch, a small amount of kosher salt, egg yolks, whole milk, unsalted butter, and vanilla bean paste.
Choux pastry dough requires whole milk, unsalted butter, kosher salt, all-purpose flour, and whole eggs.
Chocolate sauce is made from heavy cream, chopped semisweet chocolate, and a touch of ground cinnamon, finished with confectioners’ sugar for dusting.
Preparing the Pastry Cream
Start by combining sugar, cornstarch, and salt in a medium saucepan. Whisk in the egg yolks until the mixture is smooth, then add the milk while continuing to whisk.
Place the pan over medium-low heat and stir constantly. After several minutes, the mixture will begin to thicken. Once it reaches a pudding-like consistency, remove it from the heat immediately.
Stir in the butter and vanilla bean paste until fully blended. Transfer the cream to a bowl and cover the surface directly with plastic wrap to prevent a skin from forming. Allow it to cool, then refrigerate until completely chilled, ideally for at least two hours or overnight.
Making the Choux Pastry Dough
In a saucepan, combine milk, butter, and salt, and bring the mixture to a gentle simmer over medium heat. Add the flour all at once and stir continuously with a wooden spoon.
Keep cooking and stirring until the mixture comes together into a smooth dough and pulls away from the sides of the pan, forming a ball with a slightly dry appearance.
Remove from heat and incorporate the eggs one at a time, mixing thoroughly after each addition so the batter stays smooth and cohesive. The final texture should be glossy and thick. A stand mixer with a paddle attachment can also be used for this step if preferred.
Once ready, transfer the dough into a piping bag fitted with a round tip.
Shaping and Baking the Cream Puffs
Preheat the oven to 400°F and line a baking tray with parchment paper.
Pipe small rounds of dough onto the tray, about 1.5 to 2 inches wide, leaving space between each portion. If you prefer, you can also scoop the dough by hand in measured amounts. Lightly dampen your finger and smooth any pointed tops.
Bake for about 15 minutes, then reduce the oven temperature to 350°F and continue baking until the puffs are firm and golden, another 15 to 20 minutes.
Turn off the oven and let the pastries sit inside for about 10 minutes to dry out further. Remove and allow them to cool completely.
Filling the Cream Puffs
Use a small knife to create an opening at the bottom of each puff. Pipe the chilled pastry cream inside until filled. Another method is to slice off the top, remove any soft interior dough, fill with cream, and replace the top.
Place the filled puffs in the refrigerator until ready to serve.
Making the Chocolate Sauce
Warm the heavy cream in a small saucepan. In a heatproof bowl placed over the pot, combine chopped chocolate with cinnamon, allowing it to melt gently using the steam as a double boiler.
Once melted, pour in the warmed cream and whisk until the sauce becomes smooth and glossy. Keep it slightly warm for serving.
Finishing and Serving
Just before serving, dust the cream puffs lightly with powdered sugar. Drizzle or spoon over the warm chocolate sauce and enjoy immediately for the best texture and flavor contrast.

Raccoons: Clever Survivors of the Wild and Urban World
The raccoon (Procyon lotor) is classified among the carnivores, a mammalian group traditionally made up of animals that primarily consume meat. However, many members of this group are also capable of eating berries, fruits, vegetables, eggs, acorns, beech and hickory nuts, grains, grasses, and bark when other food sources are scarce. Carnivorous mammals have five toes and prominent canine teeth. Raccoons are omnivores, and the proportion of plant and animal foods they consume changes according to the season and what is available in their surroundings.
